Chef Roee Dori is making the restaurant at the luxurious Pereh Mountain Resort the latest foodie hotspot in Israel, thanks to a "wild" cuisine. And that's on the menu!

With just 27 rooms and suites, Pereh Mountain Resort is probably one of the smallest luxury hotels in Israel. It's located in the north of the country. Its restaurant, Rouge, is celebrating spring with a new menu. The young chef Roee Dori is taking care of it. He is turning the hotel restaurant into the new foodie hotspot in Israel.

The Kitchen's language

Dori started his professional career in Tel Aviv. There he cooked for celebrated top restaurants such as the Mashya and L28. During this time he developed his own culinary language. Then he went to northern Israel. Here he emphasizes collaboration with local producers. Freshness, diversity of the region and quality are paramount for him.

Herbs from the mountain region, dairy products from the surrounding area and crunchy vegetables are combined to create delicacies on the plates. And for those, it's actually worth taking the trip north. Israeli cuisine, always a melting pot of cultures, is experiencing a revival here - with a modern twist. The "Rouge" deserves its rightfully earned spot as a new foodie hotspot in Israel.

Fresh delicious food

At Pereh Mountain Resort's "Rouge," this richness is expressed in combination with the region's unheard of diversity. For example, when Chef Dori serves trout fillets from the nearby Dan River. Or when he makes gnocchi in the summer. Cheese is specially produced for him on a neighborhood farm and he gets tomatoes and other vegetables from the winery just 10 minutes away,. It's guaranteed that the carbon footprint will remain small.

Dori collects the Levantine herbs himself, including za'atar, thyme, sage, mint and basil. He turns the latter into an oil extract that is used for his homemade pasta with oven-roasted eggplant. The oven, however, is not just any oven. It's a traditional taboon. Normally, it's used to bake pita bread. But in the "Rouge", Dori smokes vegetables in it.
