Törggelen - the South Tyrolean culinary custom

The "fifth season" begins in South Tyrol as soon as all the grapes have been harvested and the vine leaves turn golden brown. The traditional custom of "Törggelen" transforms Italy's northernmost province into an autumnal holiday highlight.

The term Törggelen originally refers to the "Torggl" (Latin torquere, to turn), i.e. the wooden wine press. In South Tyrol, wine merchants, winemakers and tasting enthusiasts met in the wine cellars to sufficiently test the new vintage. This tradition has been preserved to this day, but has been expanded in culinary terms: South Tyrolean innkeepers serve up delicacies such as homemade Schlutzkrapfen, dumplings, surfleisch and house sausages with sauerkraut, sweet doughnuts and roasted chestnuts after a leisurely autumn hike.
