Vaulted Ceilings and a Monastery Kitchen: This Historic Luxury Hotel is a Must Visit

Immerse yourself in the magic of history - this will soon be possible at the new Hotel fink in the heart of the South Tyrolean town of Bressanone.

The first documented references to the building date back to 1039. The old townhouse in the center of Bressanone, which was once used as a post office, coppersmith's shop, coffee house and butcher's shop, can look forward to new splendor now. In July 2023 it'll open under the name fink as a nine-suite hotel including its preserved, typical local arbor vault and a repurposed monastery kitchen.

In the fourth generation

Johann Fink had purchased the old building in 1896. In 2023, the general renovation followed under the direction of his great-grandson Florian Fink and his wife Petra and with the help of ASAGGIO architects from Brixen. In the process, not only was the value of the historic sight made visible again, but the aspect of ecology was also taken into account during the reconstruction. Therefore, only sustainable materials were used. "We wanted to breathe new life into the historic walls with the utmost respect for the building," says the operator of the new suite hotel. 

Minimalism meets sustainability

Guests will retreat to nine bright, purist suites with solid wooden floors and rustic details from August 2023. Then the new old house will open its doors for the first time. Sustainability will also play a major role in the hotel's day-to-day operations; district heating and green electricity will be used, and water and energy will be used sparingly.

Because the hosts can look back on plenty of experience in gastronomy, a lot of emphasis is also placed on enjoyment at the fink. Behind the Lauben restaurant is the so-called monastery cuisine, which makes use of regional and seasonal ingredients such as vegetables and herbs. Centuries-old knowledge about nutrition and health, in part from old friars and nuns, rounds out the concept. The menu consists largely of vegetable dishes and changes seasonally.
